Americans eat lots of fried chicken thus the chain KFC was developed. Southern fried chicken for an American is chicken that has been floured then dipped in egg then dipped in bread crumbs. The mixture holds in the juices of the chicken and makes a tasty delight. Once you have learned to southern fry chicken you can add sauces on top and you will have a rainbow of recipes to choose from. I like to use Chicken thighs as the size is easy to handle and not too big. Below is a favorite in my family.
6 or more chicken thighs
A few cups of flour
A few cups of bread crumbs
An egg two
Salt and pepper to taste
Fresh lemon juice
A cup of virgin olive oil
A cup or more of light olive oil for frying
A half cup of fresh garlic finely chopped
A quarter teaspoon of thyme, Oregano and basil
First peel and chop the garlic and put it into a cup of virgin olive oil. Add the spices to taste and lightly fry the whole mixture. Add an equal part of fresh lemon juice.
First flour the chicken by putting it in a bag with flour and salt. Once floured, dip each piece in a mixture of egg and water. Then role it the bread crumbs. Repeat this until all the chicken is covered with bread crumbs.
Heat the oil preferably in a deep fryer. Fry the chicken and put on a paper towel to absorb the oil
Once the chicken is all fried, pour the lemon olive oil mixture over the chicken. Bake it in the oven for 30 minutes at medium heat and serve.
Once again it tastes even better the next day.
