American beef is some of the very best beef in the world. Each country has its specialty which is one of the joys of traveling. I absolutely love the way the Chinese use all the spices and have such a huge variety of flavors but our American Roast Beef is famous worldwide. So much so that the casinos in Las Vegas raise all their own beef to attract the foreign customers to the casinos; our beef is unique. In China the meat has some limitations so meat is used to flavor the dishes as opposed to eating the meat its self. In the outlying areas that is not the case but in the cities good meat is hard to come by. The general manager of the company I work for came to the USA for the first time. Previously, I was asked to cook a standing rib roast for the Chinese politicians as even I as an American was not accustomed to eating it. I would buy the American beef from the biggest hotel in town. I read the recipe in Joy of Cooking and it turned out great. When the manager of the company I work for came to the US, the first thing I did was arrange for a great meal at the best restaurant in Delaware that served Roast Beef. Well it didn’t go down very well. His comment was, oh it is awful it tastes like meat!! He is not a vegetarian but he had a different concept of meat. Likewise I don’t like Cow’s esophagus nor do I like sea cucumber which is an expensive delicacy in China!!
