Every year we prepared at least a 23 lb Turkey for Thanks giving. It is considered by many to be the favorite Holiday as it is not as commercial as Christmas where you are expected to exchange gifts with everyone. We normally buy a frozen turkey which takes a few days to defrost in the freezer. The night before thanks giving we would prepare the turkey. Fist we would take the tweezers and pluck the remaining quills out of the Turkey. Then we would smear the Turkey with butter and stuff it with two different kinds of stuffing. The basis of most of the stuffings is celery mixed with bread crumbs. In my family my mother like oyster stuffing on one end of the Turkey and chestnut stuffing on the other. As the Turkey was so big, it was hard to get it cooked all the way through without burning the skin. The solution to that was to use one of my father’s undershirts dipped in butter and draped over the Turkey. That was the last step. We would put the turkey back in the refrigerator or outside as it was cold outside until the morning. It would cook all day until around 3 pm when we would pull it out of the open to be carved. That was my father specialty was carving the Turkey. We accompanied it tradition sweet potatoes cooked in brown sugar, salad and green vegetable dish and finally a mince meat pie and a pumpkin pie. That was the tradition Thanks giving where we all ate and drank too much with the whole family and friends.
